A letter To My Disgruntled Readers-

My dearest friend or foe ,

for years I’ve been writing blogs , books and trying to educate those who are on a similar path as mine with hypothyroidism. Lately, there’s been something very deep nudging at my very core screaming to come out.  I finally decided to let it seep out of my fingertips into this blog. When I began writing about hypothyroidism, I knew it was a uncharted territory. My mindset was to search the truth, share my experiences and write compelling articles. The more I write, the more polished I become to develop my palate and skill-set. I have found something that I deeply care about and its worth every-bit of cherishing.

While I am grateful for every reader, we may not always agree but keep one thing in mind, you don’t own me, you don’t pay me and you certainly won’t have control over my life. You also don’t have to read my work and you can keep scrolling right along.  If you want to rant against my premised writings or post a rebuttal, I say, go for it.

I write from the heart and share my truth. No one has been “forced” to read me.

I’ve realized that the people who get angry about the content that I write will never buy books, anyway.  You must analyze your own truths and form your own in idea’s.

This Entitlement Mentality that our society has created is a load of crock. What I express in my blogs are purely my views and opinions from the research and readings that I’ve done. I do not claim to have the absolute entire truth; this is simply what I have  concluded at this moment in my life. You can keep your thoughtless one-sided opinions because you will gain no power with me.  In the end, you will only create anger and frustration within yourself.   Maybe something happened in your childhood where you feel the need to lash out and try to gain some sort of power over people with your hurtful words and rants.  At some point, I don’t know where you thought it was okay to blame me for your mishaps  but you need to take personal responsibility for your shit.

As each passing day goes, I continue to learn. As each passing day goes, I continue to grow.

We all have our very own skills and talents that we have to offer the world. I encourage you to find yours and stop being ugly to others because you are not where you want to be in life.

Let’s get on thing straight.

I’m not trying to sell your health. I am trying to open your eyes and give you a purpose to start being healthy.

There is no such thing as something for nothing. So many people don’t listen to their bodies. If you are constantly putting the wrong gas in your car is will start to eventually break down. Your body is the same way. One of the most common failure is the habit of quitting. Don’t allow this type of failure of defeat to trick you into quitting. You are worth great health. You have the abundance of good health within your reach.

Being healthy is a state of mind. When you start to realize that the food you eat, the products you use and the way you live all talk to your DNA. Once you realize that you have a choice to change and you want to change you will change.  You will start to read labels, you will think about what you’re eating, how it was made and will it benefit your body.

Impossible? No! Not at all.

Being healthy does come from those with a healthy conscious.  You and you alone must decide whether or not good health is important. Is good health worth the effort? You see we are wiping ourselves out. It seems with all the bad choices we are ultimately preparing ourselves for our own final destruction’s. We often do choose badly but it’s our choice to do so. The diet industry is a load of bullshit. Eat less, exercise more doesn’t work. None of us should be on the same eating plan.

Why? We are all different.

1.Macadamia Coconut Balls

2 cups unsweetened shredded coconut

1/3 cup macadamia nuts

1 banana

1/2 tsp vanilla extract

1 Tbsp. maple syrup

1 Tbsp. melted coconut oil

A pinch of nutmeg

In a food processor, process 1 cup of the coconut and all of the macadamia nuts. Add your coconut oil and pulse 10 seconds. In a medium-sized bowl, peel and mash your banana. Next add the vanilla extract, maple syrup, and nutmeg. Place the mixture from the food processor to the bowl and mix well. Using your hands, roll the mixture into one or two inch balls. Scoop up the remaining shredded coconut and pat onto each ball, coating it thoroughly. Keep your balls in the refrigerator in an air-tight container.

2.Fire Roasted Tomato Salsa with Cilantro and Lime

2 cans (14.5 oz. each) Any Organic Fire Roasted Diced Tomatoes, well drained

1 medium onion, chopped

2 cloves garlic, finely chopped

1/4 cup chopped fresh cilantro

1 tablespoon fresh lime juice

1/2 teaspoon coarse salt (kosher or sea salt)

1 to 2 fresh jalapeño seeded, finely chopped

In medium bowl, stir together all ingredients. Serve with Gluten free chips.

3.Cranberry Quinoa almond Butter Power Bars

2 Cups of cooked quinoa

2 Cups of gluten free uncooked oats

1/2 Cups of dried cranberries

1/2 Cups of smooth almond nut butter

1/2 Cups of almond milk

1/3 Cup of raw honey

1/4 Cup of ground flaxseed

1 tsp Ceylon cinnamon

 

Follow the directions and cook you quinoa as directed on the package. Preheat your oven to 350. Combine all the ingredients in a bowl together and stir until everything is mixed well.

Place in a 7×11 baking pan. Cook in the oven for 12-15 minutes.

4.Banana Chocolate Overnight Oats

2 cups GF steel cut or rolled oats (steel cut for a crunch or rolled oats for a smoother oatmeal)

1 1/2 cups of almond or coconut milk

1/2 cups almond or coconut yogurt

1–2 tablespoon cocoa

1 tablespoon of ground flaxseed (omega-3 fatty acids)

1 tablespoon raw honey or grade B maple syrup Pour the mixture into two 8-ounce mason jars with lids, seal tightly, and refrigerate for at least 6 hours, preferably overnight. When ready to eat, give the oats a good shake and dig in!

5.Honey-Lime Fruit Salad

This easy-to-make breakfast is full of vitamins and antioxidants

2 cups chopped seasonal fruits

(I use red grapes, kiwis, mandarins, and bananas)

1 teaspoon lime juice

1 tablespoon organic honey

Combine all the ingredients in a mixing bowl.

6.Chickpea Veggie Salad-in-a-Jar

This fills one 32 oz. Mason jar. Make sure to wash & dry your veggies before using.

1 oz. goat cheese

½ cup cooked, cold quinoa

1 bell pepper, chopped

1 cucumber, chopped

4 oz. grape or cherry tomatoes

5 oz. chickpeas, rinsed & dried

Dressing:

3 tsp olive oil

1 tsp white vinegar

Splash of lemon juice

Sprinkle of black pepper

Whisk dressing in a small bowl, then transfer to the bottom of the jar. Layer chickpeas on dressing. Add tomatoes, add cucumber, add bell pepper, add quinoa and top with goat cheese. Secure lid on tightly until ready to eat. Shake the salad just before eating.

 

7.Layered Quinoa Salad-in-a-Jar

This fills one 32 oz. Mason jar. Make sure to wash & dry your veggies before using.

3 Tbsp. avocado cilantro-Lime Vinaigrette

½ cup black beans, rinsed & dried

¼ cup cherry tomatoes

½ of a green pepper, chopped

½ cup cooked, cold quinoa

¼ cup organic romaine lettuce

Place the dressing in the bottom of the jar. Next add the black beans, add the tomatoes, add the peppers, add the quinoa and then add the chopped romaine. Try not to pack it in too tight, or you won’t have room to shake the dressings when you are ready to eat. Seal the lid on & store in the fridge. When ready (with the lid on) shake the jar to mix everything.

8.Avocado Cilantro Lime Vinaigrette

½ cup extra-virgin olive oil

1 cup cilantro

¼ tsp of minced garlic

The juice of 1 orange

The juice of 3 limes

1 avocado

Salt & pepper to taste

Combine all ingredients into a blender or food processor

Puree until smooth

9.“Creamy” Chicken Tomato Soup Slow Cooker

4 frozen skinless boneless chicken breast

Garlic salt to taste

2 tablespoons Italian Seasoning

1 tablespoon dried basil

1 clove garlic

1 14 oz. can of coconut milk (full fat)

1 14 oz. can diced tomatoes and juice

1 cup of chicken broth

Sea Salt and pepper to taste

Put all the above ingredients into the crock-pot, cook for 9 hours on low. After 9 hours take two forks and shred the chicken, set the crock-pot on warm till ready to serve.  For a creamier soup, before adding back the shredded chicken. Blend some of the soup and put it back in the slow cooker.  You can this in batches in a regular blend but remember it’s hot or use an immersion hand held blender.

10.Baked chicken and sweet potato casserole

1lb of chicken, cubed and diced

2 teaspoon of mustard

3tablepoons of evvo

2 medium sweet potatoes, peeled and diced

Salt & pepper to season

Preheat oven to 425. Diced your chicken into cubes and mix the diced chicken in a bowl with mustard and evoo. Sautee your diced chicken in a pan until it is no longer pink on the outside. Place your precooked chicken in a baking dish. Mix your diced sweet potatoes with your chicken. Season with salt n pepper and cook for 25 minutes until sweet potatoes are tender & chicken is cooked through.

33 Greatest piece’s of Advice That You Can Give to Your Kids

I believe that being a parent is loving your children more than you’ve loved yourself. As they grow, I’ve given a lot of thought daily to what they need when they venture out into the world. What things could I say to them that would be equip them for the world? Other than setting a good example.  While our ancestors have been around for about six million years, the modern form of humans only evolved about 200,000 years ago. Civilization as we know it is only about 6,000 years old, and industrialization started in the earnest only in the 1800s. Currently there are over 6 billion people on this planet. Everyone who has lived and died have all been unique. Each day people will offer you advice and their opinions but what you need to know is they can only understand from the paths that they have walked and their experiences up until that moment. This doesn’t make it wrong but you have to listen with open ears. Life is not a singular vision!
Try to seek a room full of “different” minded people, for no one grows when they sit in a room full of “like” minded ones! Most people have crippled themselves by their own limitations and try to impose that view on you. You will find that people are often unreasonable, irrational and self centered.     

1.Do not undermine your worth by comparing yourself with others.

2.Be more concerned with  your character than your reputation, because your character is what you really are, while your reputation is merely what others think you are.

3.You have to be a independent thinker. Think for yourself. It’s okay to listen to other peoples wisdom but keep in mind they are limited from their own experiences. You have to form your own opinions and ideals. This is a trait of a leader.

4.Question everything! Some people are very persuasive and have the uncanny ability to have you leaning toward their way of thinking.

5.Keep Integrity. Having a good strong quality of being honest along with having strong moral principles.

6.You are valuable. Value yourself enough to walk away from a bad situation, value yourself enough to walk away from a person who doesn’t love you the same.

7.Respect  your body. Move your body and feed it good nourishment. What you put in to it and how you treat it will come back to you.

8.You are enough! There is only one you and you are very unique and wonderful. Embellish who you are.

 9.Spend less than you earn. If you can’t pay cash for it then you don’t need it unless its a house or a car.

10.Don’t seek happiness through drugs, alcohol, sex and fake friends.

11. Life is short. Find what brings you joy in life. Make the most of your life by doing what you love and give it all  you got.

12.  Believe anything is possible.

13.You are the creator of possibility in your life so, follow your dreams.

14. Kindness goes a long way.

15. You will fall. It’s how you get up that counts. Never give up. 

16.No matter what happens good or bad life is about moving forward.

17. The world owes you nothing.

18. Hold fast to the adventure that life has to bring.

19. Being grateful will open your eyes and unlock many things in your life. 

20. Don’t follow the crowd and never be afraid to be different and do what is right.

21. Don’t give your emotional power to someone else. Don’t let another steal your joy.

22. Time is Precious. Be mindful of how you spend it. Where you spend it. Who you spend it with and how you waste it.  It is one of the greatest gifts bestowed upon us and the greatest gift we can give another person.

23. Don’t ever go with the flow , be the flow.

24. Close your mouth and open your ears Better to listen, learn and hear.

25.Try to always be nice to others. You never know what kind of day they’re having. A smile is always a free thing to bestow upon another person.

26. Always speak words of good to yourself. Never speak negative or bad about yourself because your mind is listening.

27. Remember when you get married , your marrying not on that person but the entire family.

28. Enjoy every day as a gift and never let loved ones in doubt of how much they mean to you.

29. Not everyone you meet will like you. Who cares they weren’t your cup of tea anyways.

30. Try to be  humble, kind, and confident in who you are.

31. Take no shit.

32. Never tell people about your lifestyle. There are certain details about your personality such as; your sex life, religious life, overcoming a bad habit, pretty much anything that might concern the world. People will hold things against you or use it against you. Sometimes its just  not worth the emotional stress to tell people your business.

33. Never air out your family’s dirty laundry for the world to see. People will gossip and twist things you say. It really disrespectful and not to smart to let others know the conflicts that are within your family. It also devalues you, your family. The stories that you tell  are usually passed on by the people you told to some other friends of theirs and this can make the issue worse if it gets back to the person in your family that you were talking about. If you have issues in your household  its best to resolve them at home.

In my final analysis, The good you do today, will often be forgotten. Do good anyways. Give the best you have, and it may never be enough but give your best anyways. What  you may spend years creating others could destroy it overnight. keep in mind, it has always been between you and GOD. It was never between you and them anyways.
