
Ingredients
- 3 medium zucchini, spiralized ( )
- 1/2 cup black olives, sliced (15 oz) marinated artichoke hearts, drained and diced
- 1 cup halved fresh cherry tomatoes
- 1/2 cup crumbled feta cheese
- sea salt and pepper to taste
- 1/4 cup sun-dried tomatoes
- 2 Tbsp balsamic vinegar
- 2 Tbsp water
- 1 clove fresh garlic
- 1/4 cup olive oil
- sea salt and pepper to taste
Instructions
- In a large bowl, combine spiralized zucchini, olives, artichoke hearts, tomatoes, and feta. Season with salt and pepper to taste.
- Place all dressing ingredients in a food processor pulsing until completely smooth.
- Season dressing with sea salt and pepper to taste if needed.
- When ready to serve, toss sun dried tomato dressing with zucchini noodle mixture.
